Wensleydale is an English cheese originally produced in Wensleydale, North Yorkshire. It’s now made across the U.K.
The wax wrapper helps the cheese retain moisture in as it ages, making the end product very dense and creamy. The wax should be removed before enjoying.
Wensleydale can range from milky and buttery to more acidic—this one is predominantly sweet thanks to the dried cranberries, with a slight tartness from both the tangy cheese and the fruit.
It works best as a sweet touch on a cheese board or served for dessert.

The cheese paper helps cover the items and stop them from drying out, while also allowing the cheese to breathe. Since cheese is mold, it’s a living thing! If you cut off air circulation to the cheese, you can actually cause it to suffocate and spoil at a faster rate.
