In Colombia’s Andean Highlands, goats graze on flowers and fresh grass. Their milk is transformed into Mousetrap’s exquisite Flor De Montaña—exclusively available through Murray’s in the U.S. This semi-firm wheel is smooth, moist, and a little crumbly. At first bite, you get briny sea salt notes, which give way to aromas of toasted almonds and a slight goat’s milk tang. A beautiful homage to mountain flora, it’s delicious sliced thick and served alongside Mitica’s Rosemary Toketti and Peppadews.

    • Like all Mousetrap cheeses, Flor De Montaña is made with the high-quality milk of a single herd of goats in the Andean Highlands.
    • The mountain grasses and flowers transmit complex flavor to the goats’ milk, which is captured in this unique cheese.
    • This is a natural rind cheese, meaning that the rind is formed in temperature- and humidity-controlled rooms where the air naturally dries the outside of the cheese with little intervention from the cheesemaker. The result is earthy and a bit mushroomy.
    • The goat’s milk interior is smooth, moist, and a bit crumbly, with small eyes throughout.
    • Goat’s milk has around the same fat content as cow’s milk, but because of a difference in fat structure, goat cheese often feels lighter on the palate.

When you receive your cheese, unpack the order and refrigerate the items. We recommend using the cheese paper we send most of our products in to store the cheese. The cheese paper helps cover the items and stop them from drying out, while also allowing the cheese to breathe. Since cheese is mold, it’s a living thing! If you cut off air circulation to the cheese, you can actually cause it to suffocate and spoil at a faster rate.
